I made these for breakfast and to fuel us post-workout. The ratio’s end up being 1:1 protein to carbs, with very little fat, and they’re light, fluffy and moist…Enjoy!!
What you’ll need….
1 ripe banana
2 Omega 3 eggs
1/2 cup free range egg whites
1/4 cup coconut flour
1/4 cup sorghum flour
1 tsp baking powder
1/2 tsp xanthum gum
sea salt
2 tsp cinnamon
4 drops liquid stevia
2 scoops unflavored, pure hydrolized protein powder (I used New Zealand Whey)
3/4 cup cold water or more
Simply put everything into a blender, and pulse til smooth. Add more water if necessary, the batter should have the consistency of a sauce. I cooked up 9 4″ pancakes in a little bit of coconut oil with a berry reduction I made stove top while the cakes were cooking!
