What you’ll need…
1 tsp toasted sesame oil
heavy pinch sea salt
2 tsp Mirin
2 tsp fish sauce
2 tsp rice vinegar
2 tsp fresh grated ginger
1/2 tsp of minced garlic & shallot, (tiny, tiny bit!!)
dash of stevia
3 oz of shaved pork, loin cut
Simply heat up the oil in a small saucepan, add the rest of the ingredients and bring to a boil. Reduce heat to low, place the shaved pork in a single or double layer in the saucepan, and gently steam, covered, for about a minute. Remove from the pan, plate with a bit of Sambal sauce and some thinly shaved scallions, (green spring onions).
