Ever since finishing my last competition, I’ve been slowly adding back in fruits and vegetables, and some dairy, back into my diet. I’m sticking with my 1 whole egg-3 egg-white omelette for breakfast. Why change something that tastes so delicious and makes my body happy? The eggs here in Tulum have such a rich, almost orange yolk, it’s interested that the quality is so much better than what is available back home, (unless you buy the premium Omega-3 eggs, of course). I haven’t found egg-whites yet, but I’ll be asking the local grocers if they might possible get them in.
I’m now eating about 2 cups of vegetables & fruit with every meal, and I’m now eating about 5 meals/day. Though I’m no longer measuring or weighing my food, after 4 months of dieting, my ability to eye-ball food is pretty darned good, and as long as I can see my ab-wall and quad separations, I’m okay.
Here, I’ve sauteed up a mix of bell peppers in a little bit of olive oil and unrefined salt, added in a touch of lime juice, fresh onion and tomatoes, and about 1 1/2 tsp of goat cheese for the filling, and then I made a little salad of spinach leaves, the extra sauteed peppers, and a genergous scoop of low-fat cottage cheese. Underneath the omelette you can see a nopal corn tortilla, 7 g of carbs, gluten free. Nopal is cactus, btw…
