I’ve been stricken down with yet another illness here in Mumbai, this time it’s just a head cold/sinus infection, but to have two bouts of sickness in the middle of a dial-in is a pain in the neck! Still, it allows me to come up with some quick meals that don’t take much thought or effort, are filling and as clean as any trainer could possibly want.
I’ve been making this soup with the same 2 cups of vegetables and simply switch out the proteins to change the flavor profile.
what you need
1 tsp olive oil
2 cups par-boiled vegetables (I used daikon, cauliflower and green peas)
2 – 5 oz protein, depending on your diet (poached chicken, lamb meat-balls, chick-pea “balls”)
1/2 organic bouillon cube
Simply get your oil hot in the bottom of your pot. Add your vegetable portion, stirring often to prevent burning, and then after about 2 minutes or so, add 1 cup water, the bouillon dissolved in a little bit of hot water, and when that is simmering, add in your protein. Cook for another 2 minutes until the meat is warmed through, pour everything into a bowl, and enjoy! Feel free to take your kitchen shears to some fresh parsley and sprinkle on top…
