I’ve said it before, I loooove omelettes, the french variety. Just a very thin layer of egg wrapped around 2 Tablespoons of ingredients and voila, dinner is served in less time that it will take to eat this tasty and nutritious envelope! I often eat 1 or 2 omelettes a day, and since I like variety, I’m always coming up with new variations.
Tonight I had some small prawn that I had prepared earlier in the day, a few really sweet baby tomatoes, some cilantro, and feta cheese. This was one of the best combinations I’ve had in a while. The prawn were lightly floured and pan-fried in a little bit of butter and olive oil, along with some garlic, chilis, and ginger. They were tender, a little spicy, and delicious as a filling. Shinu, our maid, had made fresh paratha today as well (a traditional Indian flat-bread made from layering stone ground flour, or atta, with ghee and fresh herbs) so I had one of those. Delicious…!
As you may or may not know, I’m teaching Bikram yoga in India for the rest of this year, and live in a condo put up by the school. We have an amazing and sweet young woman who comes to our house and takes care of us, and she is an amazing cook. While I prefer to cook for myself, (I looove cooking/preparing my own meals), I do hope to learn from her while I’m here. Her quickness and skill at rolling out all manner of Indian flatbreads is truly amazing, and tonight I just tried some of her pickled mango and wow! Trust me, I will convince her to show me that recipe and post it here. Made with the highly sought after Alphonso mangoes of India, this preserve is out of this world!

Michelle, I am learning so much about food from your blog! It would be so awesome if you could post/make a shopping list and a few weekly menus…I want to eat the way you are describing in your blog, but am intimidated and could use the direction. It seems like you keep prep times pretty low, which is so appealing as both a mother and business owner! Very inspiring!
