My latest creation, and current favorite carb-up/refeed meal: wide rice noodles with a dark soy sauce, crushed peanuts, some ground meatball, and p-l-e-n-t-yyyy of coriander! I prefer mine a little on the spicier side, so adjust the Sambal sauce and fresh ginger accordingly!

What you’ll need…
2 cups of cooked wide rice noodles, (Thai style)
2 tsp toasted sesame oil
1 tsp fish sauce
1 tsp mirin
2 tsp rice vinegar
2 tsp maple syrup
2 – 3 tsp tamari
1/2 tsp cornstarch
2 tsp minced shallot
1/2 small garlic clove, minced
2 tsp grated ginger
2 tsp Sambal sauce
2 Tbsp chopped toasted peanuts
plenty of fresh, chopped coriander
1 -2 Meatballs, crumbled
Get a saucepan on med-high heat, then add the oil, fish sauce, mirin, vinegar, maple syrup, and tamari and simmer for a few seconds, and then whisk in the cornstarch, and let cook for another 2 minutes until it thickens. Add the shallot, garlic and ginger and simmer for about a minute until the shallot starts to soften and the flavors meld. Taste the sauce and adjust if necessary. Add the Sambal sauce, and your done! Simply toss the cooked rice noodles in a little bit of sesame oil and a dash of rice vinegar, plate your portion, (I usually eat 1 cup on a refeed day, and save the other half for a second meal), then ladle the sauce over top, crumble 1 or 2 meatballs on top, sprinkle with the peanuts and coriander, and feast!!!!
