French Chicken Salad

What you’ll need…

2 cups leftover roast chicken, both white and dark meat, shredded into bite-sized chunks
2-3 Tablespoons thick greek yogurt
6 sandwich pickles, small dice (these are the sweeter pickles cut into coins)
salt and pepper to taste
few dashes of brown rice vinegar

Simply combine all the ingredients into a bowl, mix thoroughly, and enjoy. It’s great for about 2 days worth of sandwiches and salads, and you can also feel free to jazz it up by adding a bit of chopped celery or some toasted walnuts. It’s pretty tangy with the pickles, so if you want to make a completely different flavor, substitute some chopped pear or apple for the pickles, and definitely add the walnuts in….
