Mumbai Stew with Paneer

Day 3 of my dial-in, and as I promised, 1/2 of my meals will be meat free, (not vegan mind you, but featuring protein sources from the vegetable world as well as eggs and dairy products). I bought these beans a while ago, and have been itching to make a stew with them. I cooked up this recipe in the middle of savasana, (where most of my better ideas percolate into being) yesterday, so when I got home I put the beans in a pot of water to soak, and cooked them off in the morning with some classic masala spices, onions, tomatoes and voila…a super high protein, high fiber, mineral rich stew was born. I topped the stew with my favorite treat, some paneer which I sauteed in a special kind of ghee that I also made in the morning called, “Niter Kibeh”, an Ethiopian-style clarified butter made with various spices that taste terrific and also support good digestion….
