I love cooking with Port, both for sweet and savoury dishes. Just a splash or two, and your food goes from average to knock-out with a few minutes on high heat. Just be careful adding alcohol to the pan if you’re using a gas flame!
What you’ll need…
1 ripe bosc pear, peeled and sliced
1 tsp coconut oil
pinch of sea salt
pinch of stevia
generous splash of tawny port
This will take you about 6 minutes, and you can make it for breakfast while your coffee is getting ready. Get a small saucepan on medium-high heat, add the oil, and when it’s ready, add the pear, cover, and let carmelize on one side. In a couple of minutes, carefully turn the pieces over, cover and let that side brown as well. Add a splash of the port into the pan, along with a pinch of salt and a tiny bit of stevia for added sweetness, turn the heat up a bit until the juices are simmering vigorously, and reduce for another 1 or 2 minutes. The pear slices should be soft and sweet, and you will have about 2 teaspoons of sauce left in the pan to drizzle over everything. Enjoy!
