What you’ll need…
1 large egg yolk
4 Tbsp cold butter, cut into small pieces
1 1/2 tsp or more of fresh lemon juice
sea salt to taste
Warm the yolk slowly in a small saucepan, set over a pot of boiling water, and whisk vigorously until it thickens and turns a lemony-yellow color…Slowly start to add in the cold butter one-by-one, whisking in each piece until it is all absorbed. Season with the lemon and salt to your taste. This should make enough for two filets!!
