Salmon and Pork Cakes….

November 1, 2012 by Michelle

–>

What You’ll Need…

1 Tbsp diced onion
1/2 tsp butter
3.5 oz salmon, minced
2 oz ground pork tenderloin
1 Tbsp rice flour
1 tsp grated ginger
2 Tbsp grated carrot
2 Tbsp egg whites
salt & pepper
1/2 tsp ground cumin
1 tsp coconut oil for frying

Sooooooo simple!  Just sautee the onion for a minute in the butter over medium heat in a non-stick pan,  remove to a bowl to cool down, and in the meantime whisk together the salmon, pork, flour, ginger, carrot, egg, salt and pepper and cumin. Combine with the cooled onion mixture.  Shape the mixture into 2 small burgers. Heat oil in a frying pan and cook burgers for  about 2 minutes on each side.  Serve with your favorite toppings!
I had mine with my tamari-ginger dipping sauce and some sauteed spinach and water chestnuts…

I don’t know why your program would give you those numbers..where is the 30 grams of fat coming from?

Hi Josh, I’m not sure what service you’re using, but 3.5 oz of salmon + 2 oz ground pork + 1 egg = 40 grams of protein! I didn’t bother looking at other calculations as this first one was so far off. Hope this helps!
