Succulent Beef Roast

This is one of the easiest ways to prepare beef, it takes seconds to whip together, and then you just leave it in the oven to slowly cook in its own juices for about 2.5 – 3.5 hours, depending on the size of the cut.

What you’ll need...
2 lbs of beef pot roast, bone in
2 Tablespoon of olive oil
2 teaspoon each: smoked paprika, coriander, cumin, oregano, chili powder, thyme
Salt and pepper to taste

Turn the oven on to 300˚ and get a wide-bottom saucepan on med-high heat with the olive oil in it. Meanwhile rub the roast with the dry spice mix, and then sear it on both sides once the oil in the pan starts to shimmer. It should be about 2 – 3 minutes on each side. Simply cover the pan with a lid or tight fitting aluminum foil, place on the middle rack of the oven, and let it cook slowly for about 2.5 hours or until meat falls apart when pierced with a fork. It really should be that tender!
