Economy of time is paramount in my kitchen, and I like to cook up large roasts of meat on the weekend to provide enough variety of ready-to-go protein for several meals. Roasting a large turkey or chicken is a no-brainer, and with the meat I can make stews, soups, quiches, casseroles, salads and stir-fries. A divan is a favorite casserole dish in our house, and it’s great as a high protein/fat-low carb meal at the end of a long day at work.
What you’ll need…
2 tsp butter
2 tsp rice flour
1/2 cup whole milk
2 Tbsp cream
salt and pepper to tastesqueeze of fresh lemon
leftover turkey meat, pulled into 2″ pieces, about 2 cups
2 cups of broccoli rabe, blanched and cut into 2″ pieces
1/2 cup of grated parmesan
Preheat the oven to 375˚F. In a small saucepan, heat the butter and flour together, then whisk in the milk and cream and cook until it forms a thick sauce. Season with lemon, salt and pepper. Lay down half the broccoli rabe in a medium casserole dish, then a layer of turkey, cream sauce and cheese. Season with salt and pepper, then lay down another layer of everything. Loosely cover with tin foil and pop in the oven to cook for about 20 minutes, then remove the foil, and broil for another 2 – 3 minutes until the cheese forms a golden crust.
