Turkey Meatballs with Sweet Onion and Celery

When I’m getting ready for an event, I really like to use ground meat, (turkey, chicken, salmon, beef, lamb, etc) because it’s so easy to portion out, and I can change the flavor profile by swapping out various ingredients. I favor rolling out 1 oz balls, so that it is easy for me to put together my daily tupperwear containers when I head out in the morning, and depending on what my goals are, what my workload for the day is, and what my macro percentages are for that day, I can easily grab either 1, 2, 3 or 4 balls and I’m ready to go!
