White-Miso Glazed Zucchini

What you’ll need…
3 medium zucchinis, cut into 1/2-inch slices
2 Tablespoons white miso paste
1 Tablespoon honey
1/2 Tablespoon rice vinegar
1/2 Tablespoon tamari
1/2 clove garlic, minced
toasted sesame oil

Heat the broiler, and line a baking sheet with foil. Toss the zucchini in just enough sesame oil to coat them, and arrange in a single layer. Combine the miso, honey, vinegar, tamari and garlic into a paste, and brush onto the exposed sides of the zucchini. Roast for about 3 – 4 minutes until they start to carmalize, turn over, brush with the sauce again, and broil for another 3 minutes. Brush one more time before serving…
