I had some sun-dried tomatoes kicking around in my fridge 4-evaaaahhhh, and I finally decided to put them to good use. This recipe is soooooo super-duper easy, and adds soooooo much bang-pow!!! to a myriad of dishes, you simply MUST TRY!!!
What you’ll need…
1 cup of loose sundried tomatoes
1/3 cup pine nuts
1/4 cup grated parmesan
1 smashed garlic clove
7 small pickled cocktail onions
1 good splash of extra aged balsamic vinegar
1 good splash of balsamic vinegar
1/3 cup quality olive oil
retained soaking water from the tomatoes if needed for blending
sea salt to taste
Quick boil the tomatoes in a small saucepan for about 3 minutes in just enough water to cover, then remove from the heat and let soak for 10 minutes. Then add all of the ingredients to a small cuisinart except for the reserved soaking water and salt, and start blending. This could take a couple of minutes. I suggest adding the reserved water a tablespoon at a time, and scraping down the sides of the bowl as well. Add the salt at the end and adjust according to your own wee tastebuds. Remember, this is a condiment, so you want it to have high impact flavor. Don’t be shy to splash in extra vinegar if you think it needs a bit of an extra kick!
I had a few drops the first night I made it with some pan-seared scallops. It would also be fantastic with roasted eggplant, as a coating for roasted chicken, and you could also blend in some lime and harissa spices and serve it on a lamb burger! Yummers!!
